this chocolate mint ice cream is so yummy! light and chocolaty with a slight hint of mint. it’s perfect for a summer day or even adding it into a hot mug of hot cocoa to add a little extra something.

chocolate mint ice cream
makes 1 quart
1 1/4 cup milk
1 1/4 cup heavy cream
3/4 cup granulated sugar
pinch salt
1 tsp vanilla extract
1/4 tsp mint extract
1 1/2 cup chocolate
place all of the ingredients, except for the chocolate, into a pot and bring to a boil, whisking to make sure the sugar dissolves. pour over the chocolate and stir until fully melted, cover with plastic wrap and place the ice cream base into the fridge overnight to cool and to let the flavor increase. following the manufacturer’s instructions of your ice cream machine, turn the base for 20-25 minutes. place the ice cream into a freezer safe container and freeze overnight to firm up.
