these individual fudge brownie are perfect and easy to make for a small family dinner dessert. or even a double date! or just to eat by yourself warm and with ice cream on top. in the pictures the brownie is featured with pumpkin ice cream which i will be sharing in a couple weeks!

fudge brownie
makes 4 ramekins
1 stick salted butter
1 cup chocolate chips
1/3 cup powdered sugar
1 egg
2 egg yolks
1 tbsp vanilla extract
1 tsp instant coffee
1/4 cup + 1 tbsp all-purpose flour
pinch salt
preheat the oven to 425 degrees F. spray 4 small ramekins and place on a sheet pan. in a bowl, melt the butter and chocolate in the microwave for 30 second bursts until melted and fully combined. mix the powdered sugar and instant coffee together and add in the egg, yolks, and vanilla until combined. slowly add the chocolate mix into the egg mixture. whisk in the flour and salt until no lumps are there. divide evenly among the ramekins and bake for 12-15 minutes until the edges are soft and the middle is soft.
