This honey olive oil ice cream is quite simply dairy free and not to mention vegan, obviously. It’s made with Silk brand heavy cream and half & half that you can find in grocery stores such as walmart. Now this ice cream has a punch of honey flavor with a slight hint of olive oil. It’s quite different but perfect in every way that isn’t the traditional ice cream. Since this ice cream is dairy free, it doesn’t have the substantial milk solids and fats to make this ice cream more creamy. That makes it a little more on the icy side but that doesn’t ruin the integrity of this delicious ice cream. I mean come on, not all vegan ice creams are going to be 100% accurate and be just like ice cream but it certainly doesn’t mean that it won’t be delicious!
If you want to experiment and use your favorite dairy free cream and dairy products, than I say go for it! That’s what baking is about. Trying different techniques and making it your own.
Above are some products that I personally use and recommend for this recipe and to have for everyday use. I cannot recommend this ice cream machine enough! It’s such a great price and it’s so easy to use. The directions are so simple and it’s easy to clean. I use it for all of my ice cream recipes, whether it’s sorbet, sherbet or just a simple vanilla ice cream this is the tool that I will always go back to.
honey olive oil ice cream
- 3/4 cup silk heavy cream
- 1 1/2 cup silk half & half
- 1/4 cup olive oil
- 1/3 cup honey
- 1/3 cup granulated sugar
- pinch salt
- 1 tsp vanilla extract
- place the cream, half & half, olive oil, honey, sugar, salt and vanilla into a pot and bring to a boil, whisking to make sure the sugar dissolves. place the ice cream base into the fridge overnight to cool and to let the flavor increase. following the manufacturer's instructions of your ice cream machine, turn the base for 20-25 minutes. place the ice cream into a freezer safe container and freeze overnight to firm up.
